Dear Farm Journal,
At first glance, it seems that winter has whisked away the rich colors of Keewaydin. However, we delve into bins in the pack shed or peel back the row covers in the greenhouse and are met with a rainbow of color. The fall colors came and went too quickly, and snow has covered our green grass, but the food here still conveys color into our day. The mini sweet peppers pop bright red, orange, and yellow. The stems and veins of the rainbow swiss chard burst with bright blooming pink and purple. We rinse the dark soil from beets to expose dark juicy undertones. Skittles doesn’t have anything on us. This is the real way to “taste the rainbow”.
