Dear Farm Journal,
Today Rufus and I put up a mini hoop house over the surviving beds of spinach in Field A. We pounded short stakes of re bar into each side of the bed and bent segments of PVC pipe in a row of arches. Then we stretched over a large sheet of greenhouse plastic and weighted it down around the edges with the decorative pumpkins (which were already there) and sandbags. Even though the spinach is covered with snow right now, we are pretty confident that it will recover. We have seen spinach that is frozen solid perk back up with some heat and sunshine, or a rinse after it is harvested. I only wish more of our spinach would have pulled through. It’s such a great winter crop.
