Dear Farm Journal,
I’m on a mission to save the last of the summer vegetables because I know this is really it; the last of the tomatoes and peppers. These vegetables never fail to amaze me. How can a tomato that was harvested so long ago hold up with such integrity? Sure, I threw out a bunch of them, but I still have three black bins of green tomatoes. I went through the bins and gave each tomato a little space and separated them with paper because they seem to last longer if they aren’t touching each other, sort of like kids in the back seat of a car. Every evening this week has been spent chopping, and I will employ anyone I can. Rufus and my Aunt Karla have given me a hand with the peppers, and I am finally on the last bin of mini sweets. I’m going to fill that freezer up yet.
