Yesterday’s tomato sauce project has inspired me to take on applesauce canning for the first time, so Rufus and I head out to harvest apples. The last time we checked one of the sweeter trees, the apples were’nt quite ripe yet, but today they are perfect and the branches are heavy with fruit. Rufus picks from the ladder and I pack them into the bin. I’ve also picked a quart of raspberries to add into one of the batches. I listen to music while I chop and periodically take trips down to the pigs, who are almost as enthusiastic about the project as I am. At the end of the night, I had four quarts of raspberry applesauce and eight pints of maple applesauce from one black bin of apples, and I estimate I ate about a gallon in the process.
