Wild Ramp Potatoes

  • 5 large potato peeled and sliced
  • 2 tbsp bacon drippings
  • 6 ramps thinly sliced
  • 5 slices bacon chopped
  • salt and black pepper to taste

1.-Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heatto medium-low and simmer until beginning to soften, about 10 minutes; drain.
2.-Heat bacon drippings in a large skillet over medium-high heat; cook and stir potatoes inthe hot drippings until golden brown, about 15 minutes. Stir ramps and bacon with thepotatoes; season with salt and black pepper. Continue cooking until the ramps are soft,
about 5 minutes.
