Baked Red Kuri Squash

Baking squash is an easy and tasty way to prepare squash. For a crunchy snack, toasted squash seeds.

Serves 4

2 pound Red Kuri or other winter squash
Butter, ghee or palm or coconut oil
Sea Salt
Preheat oven to 375 degrees F.

Cut squash in half* and scoop out seeds. Rub interior and exterior with fat and a sprinkle of salt. Place, cut side down, in a shallow baking dish or cookie sheet. Bake for about 45-50 minutes (30 minutes for Delicata) or until the shell starts to wrinkle or sag and the squash is soft to the touch. Serve in wedges.

Puree left over squash, season and serve as a side dish, add to a soup or use as a pie filling.

*If a squash is too awkward to cut, bake it whole at 350 degrees until it feels soft to the touch, from 30 minutes to 1 hour depending upon its size and variety.

Turnips, Winter Squash/Pumpkin And Potatoes

Ingredients for

  • ½ winter squash or pumpkin, peeled, quartered
  • 3 turnips, peeled, sliced
  • 4 potatoes, peeled, quartered
  • 1 cup milk, scalded
  • 2 tablespoons butter
  • Seasonings to taste

Instructions

  1. Boil Winter Squash or pumpkin, turnips and potatoes in salted water for about 30 minutes.
  2. Drain off water.
  3. Mash with a potato masher.
  4. Add milk, butter and seasonings.
  5. Then serve.

How to cook winter squash or pumpkin

  • 1.  Cut winter squash in half and scoop out the seeds and stringy flesh before cooking. Remove any stems.
  • 2.  Roast winter squash halves or pieces, without peeling, in a 400 degree F oven for 40 to 50 minutes or until tender. Serve with butter, brown sugar or maple syrup. Try butter mixed with cinnamon and red chili for a change of pace.
  • 3.  Scoop the roasted squash out of the peels and mash with butter and milk or cream. Add some grated Gruyere cheese or the sugar or syrup.
  • 4.  Peel the squash with a vegetable peeler and cut into chunks. Roast the chunks with onion wedges and olive oil for 35 to 45 minutes, or until tender. Toss with fresh chopped sage and parsley.
  • 5.  Boil squash chunks for 5 to 15 minutes, depending on size. Mash or use in recipes.
  • 6.  Fry peeled squash slices in a mixture of butter and oil, or in olive oil, over medium heat until golden brown and tender on both sides.  Bread the slices lightly with cornmeal if you like.
  • 7.  Add cooked, diced winter squash to a basic risotto.

    New Ways to Toast Winter Squash Seeds

    Sweet & Spicy Pumpkin Seeds
    1 egg white
    1/4 cup natural cane sugar
    1/2 teaspoon cayenne pepper
    scant 1/2 teaspoon fine grained sea salt
    1 cup fresh pumpkin seeds

    Preheat oven to 375. In a medium-sized bowl whisk together the egg white, sugar, cayenne and salt. Add the pumpkin seeds and toss well. Drain off any excess egg white (using a strainer) and place seeds in a single layer across a baking sheet. Bake for about 12 minutes or until seeds are golden. Sprinkle with a bit more sugar and cayenne pepper when they come out of the oven. Taste and season with more salt if needed. Makes one cup.

    2 teaspoon curry powder
    scant 1/2 teaspoon fine grained sea salt
    1 cup fresh pumpkin seeds
