Chocolate Beet Cake

Beets in a chocolate cake? You might think this is one of those sneaky recipes showing you how to hide vegetables in kids food. It’s not. The beets lend moisture and texture to this chocolate cake. But other than that, you can’t really taste them.I came up with this chocolate beet cake recipe when I kept getting fresh beets in our CSA Share, and my family wasn’t too crazy about them. Ingredients:

  • 3 large beets
  • 1 tsp. olive oil
  • 1/2 cup applesauce
  • 1-1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1/2 cup unsweetened cocoa powder
  • 1-3/4 cups all-purpose flour
  • 1-1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 cups mini chocolate chips

Preparation:

  1. Preheat oven to 375 degrees F. Spray a 9 x 13 pan with cooking spray.
  2. Trim stems off beets, and wash off dirt. Drizzle olive oil over beets. Wrap loosely in foil and place on a sturdy baking sheet. Roast 45-55 minutes, until tender when pierced with a fork.
  3. Remove from oven and let beets cool 10-15 minutes. Peel and cut into chunks.
  4. Place beet chunks and applesauce in a food processor, fitted with a metal blade. Pulse until smooth.
  5. Beat sugar, oil and eggs together in a large mixing bowl. Add cocoa powder and beet mixture. Mix well.
  6. Sift together flour, baking soda and salt. Gradually mix into batter until no clumps of flour show. Do not overmix.
  7. Stir in half of the chocolate chips. Pour into prepared pan.
  8. Bake 40 minutes. Sprinkle with chocolate chips. Bake another 2-10 minutes until cake is done.

Asparagus Frittata Recipe

Ingredients

2 teaspoons olive oil
1 small onion, thinly sliced (or 2 or 3 purple scallions)
1/2 teaspoon salt
1 pound asparagus, tough ends snapped off, spears cut diagonally into 1-inch lengths
4 large eggs, lightly beaten
1 cup shredded Gruyere or Swiss cheese

Method

1 Heat olive oil into a 10-inch oven-proof frying pan over medium high heat. Add onions and salt and cook, stirring occasionally, until onions are softened, about 3 minutes. ip owner . Add asparagus, reduce heat to medium-low, and cook, covered, until the asparagus are barely tender, 6 to 8 minutes. Pour in eggs and cook until almost set, but still runny on top, about 2 minutes. While cooking, pre-heat oven broiler.

2 Sprinkle cheese over eggs and put in oven to broil until cheese is melted and browned, about 3 to 4 minutes. Remove from oven with oven mitts and slide frittata onto a serving plate. Cut into wedges.

Asparagus with Parmasan Cheese

Ingredients:

Asparagus

Garlic

Parmasan Cheese

Olive oil

Garlic Salt to taste

Directions:

Preheat oven 350 degrees.  Chop Asparagus into two inch pieces.  Cut garlic into small bits.  In a bowl toss Asparagus, garlic, olive oil and garlic salt together.  Use enough oil to coat everything.  Lay flat on a cookie sheet and cook in the oven for 10 minutes.  At the end sprinkle with parmasan cheese  and leave in oven just long enough to melt.  The asparagus will be crisp, tender and juicy all at once.
